Saskatoon Berry Muffins

1/2 c. rolled oats
1/2 c. orange juice
1 /2 c. flour
1/2 c. sugar
1/2 t. salt
1/4 t. baking soda
1/2 c. oil
1 beaten egg
1 -1 1/2 c. saskatoon berries (blueberries also work)

Topping:
2 T. sugar
1/4 t. cinnamon

Soak oats in orange juice then stir in oil and egg.  Stir dry ingredients together.  Make a well in the dry ingredients.  Add oat  mixture to dry mixture along with berries and fold together.  Don't overmix.
Bake in muffin tin at 375ºF. for 18-20 minutes.
