Raisin Rice Pudding

1/2 c. rice
 2 eggs, slightly beaten
2 c. milk
1/2 c. sugar
1/8 t. cinnamon
1 t. vanilla
1/2 c. raisins
1 t. grated orange or lemon peel

Cook rice.  Combine eggs, milk, sugar, cinnamon, vanilla, raisins and peel.  Add to rice.  Pour into well-greased 1 1/2 qt. baking dish and bake until knife inserted in center comes out clean.  Bake at 325ºF for 45-50 minutes.  Serves 4-6
