Rhubarb Oat Dessert

1 1/2 c. flour
1 1/2 c. oats
1 c. brown sugar
1/2 c. chopped walnuts
1/4 t. baking soda
1/4 t. salt
1 c. margarine
3 c. rhubarb
1/4 c. water
3 T. cornstarch
1 1/2 c. sugar
1 t. vanilla
red food coloring

Combine flour, oats, brown sugar, nuts, baking soda, and salt.  Cut in margarine.  Press 3 c. into a 9 x 13 pan.  Combine 1/4 c. water, sugar, and cornstarch.  Add rhubarb, vanilla and food coloring.  Bring to a boil and simmer 5 minutes.  Spoon over crust.  Sprinkle with remaining crumbs.  Bake at 350ºF. for 23-25 minutes.
