Baked Stuffed Salmon

1 whole salmon
1 box rice-a roni
1 c. water
bacon slices
onion

Lay 2 large pieces of foil on counter.  Place salmon on foil.  Add water to rice-a roni.  Put slices of bacon the short way across the salmon until it is completely covered, then put lots of sliced onions on top of the bacon.  Then wrap the foil tightly around the salmon.  Bake at 350ºF about 3-4 hours, depending on the size of the salmon.  (It can also be cooked on the grill.)

~We were Alaska 'fish snobs'.  We thought the best salmon steaks were silvers (Coho), the best canning fish were reds (Sockeyes), and the best baking fish were kings (Chinooks).  Pinks and humpies were dogfood.  Once when granddaughter Kathleen's college cafeteria was serving salmon for dinner, most of the kids were very excited to see such a treat, but when she saw that they were serving pink, farmed salmon, she wondered why the college would serve them dogfood!
