Buttermilk Pie

1 (9 inch) unbaked pie crust
2 eggs, beaten
1 c. white sugar
3/4 c. melted butter
1/4 t. salt
1 T. all-purpose flour
1 c. buttermilk
2 t. vanilla extract

Preheat oven to 350ºF.  Place beaten eggs in a medium bowl.  Gradually beat in sugar.  Stir in melted butter, salt, flour, buttermilk and vanilla extract.  Mix until smooth.  Pour mixture into pie crust.  Bake in preheated oven for 50 minutes.  Pie is done when toothpick inserted in center comes out clean.

~Myrtle raised her family of 9 children during the Great Depression.  She didn't have many ingredients to work with, so she pretty much cooked whatever they could get.  Buttermilk was one thing that was available to her.   Her son, Verlin, didn't care much for buttermilk as a child, though he grew to like it later.  He DID like her buttermilk pie.
