Banana Spice Cake

5 and 1/2 c. flour
4 t. baking powder
2 t. baking soda
2 t. salt
1/2 t. cloves
3 t. cinnamon
1 1/2 t. nutmeg
1 1/2 c. shortening
2 2/3 c. sugar
4 eggs
3 1/2 c. mashed bananas
4 t. vanilla

Combine dry ingredients and set aside.  Cream shortening with sugar.  Add eggs and beat thoroughly.  Add dry ingredients and bananas alternately in small amounts.  Bake in 4 greased and floured loaf pans at 350ºF for 35 minutes.

Frosting:
1/2 c. mashed banana
1/2 t. lemon juice
1/4. c. butter or margarine
3 1/2 c. powdered sugar
Can be topped with grated nuts.

~This is the best recipe ever for using up bananas which are past their prime.  It is a cake, not a bread.  Roma always seemed to have a loaf which she could pull out of the freezer at the last minute.  We discovered it tastes about as good frozen as thawed.
